Along the Rock: S3 Ep 132-The Valley’s Best Burger: Inside the Shamrock Pub Community & Secret Recipes

Hosted by Kierstyn Long, Article by Sara Bellows
On this episode of Along the Rock, host Kierstyn Long sat down with owners Stew and Elaine Bruns to discuss what sets their restaurant apart, their commitment to quality and why customers continue to return year after year.

The couple credits the restaurant’s success to a simple philosophy: everything possible is made fresh. Their burgers are hand-pattied in-house using fresh, never-frozen beef, and vegetables are prepared fresh rather than purchased pre-sliced. The only frozen items in the kitchen are appetizers.

While the Shamrock Burger and the popular Triple Cheeseburger were featured during the interview, the Bruns explained that the Yankee Clipper remains one of their biggest customer favorites. Other menu standouts include the Sham Mac, an olive burger, and house-made Reubens featuring corned beef cooked in-house.

The restaurant has become especially well known for its corned beef. Since taking over the business in 2012, the Bruns have transformed corned beef from an occasional menu item into a year-round staple. During this year’s St. Patrick’s Day celebration alone, the Shamrock prepared approximately 1,600 pounds of corned beef to meet customer demand.

Another seasonal favorite is the Shamrock’s Irish tacos, which feature house-cooked corned beef, homemade coleslaw, and shredded cheddar cheese. The limited-time offering has developed a loyal following, with customers eagerly awaiting its annual return.

Beyond burgers and sandwiches, the Shamrock Pub has also built a reputation for its hand-battered beer-battered chicken strips, another menu item that attracts diners from throughout the Sauk Valley.

The Bruns believe the restaurant’s atmosphere is just as important as its food. With seating for only 42 guests, the Shamrock offers an intimate setting where regulars and first-time visitors often share tables and strike up conversations.

The owners described the restaurant as an extension of their own home, often going out of their way to make guests feel comfortable. Families, longtime customers, and travelers alike are welcomed into the close-knit environment that has developed over decades.

That family-first mindset extends beyond the dining room. The Shamrock closes only on Christmas, Thanksgiving, and Easter, while also hosting an annual customer appreciation celebration the night before Thanksgiving that brings together regular customers, returning family members, and visitors for food, prizes, and fellowship.

The Bruns also remain deeply involved in the community. They support Veterans Helping Veterans in Amboy, participate in local fundraisers and events, and will once again sell Depot Days tickets at the Shamrock.

They also invited the community to attend the July 12 Cruise-In, Fly-In and Car Show at Dixon Airport, where the Shamrock team will serve food throughout the day alongside live music, family activities, classic cars and aircraft displays.

Located on Chicago Avenue (Route 52) in Dixon, the Shamrock Pub has become a destination for both locals and travelers looking for freshly prepared food and a welcoming place to gather.

The restaurant is open Monday through Saturday from 11 a.m. to 9 p.m. and Sundays from 11 a.m. to 7 p.m., offering customers an opportunity to experience the handcrafted food and hospitality that helped earn the title of Best Burger.

After the interview, the fun continued with a friendly burger-eating challenge. Nathan and Quinn Stahr put their appetites to the test to see who could claim the title of burger-eating champion while tackling one of Shamrock Pub’s massive burgers. Be sure to watch the full episode to find out who comes out on top.
